Winemaking

Machine harvested grapes were pressed and cleared using flotation, a gentle technique that preserves the delicate fruit aromas and natural freshness of the variety.

All work was done as reductively as possible to prevent oxidation. The juice was racked with a little of the fermentation lees to a fermentation tank, where fermentation took place at a cool 16°C.

After fermentation, the wine was pumped off the thick lees and stored on the thin lees, where it developed texture and the characteristic butterscotch richness that defines this wine.
